Irresistible lemon cheesecake bites, perfect for summer parties.
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1 can (6 oz) frozen lemonade concentrate, thawed
  • 1 lb (3 1/2 to 4 cups) powdered sugar
  • 3 cups graham cracker crumbs
Instructions:
  • Prepare a cookie sheet by lining it with waxed or parchment paper. In a medium bowl, mix cream cheese, lemonade concentrate, and powdered sugar together using a spoon or electric mixer on low speed. Gently stir in graham cracker crumbs.
  • Shape the mixture into small balls using a 1 1/2-inch scoop and place them on a cookie sheet. Chill in the refrigerator for 1 hour before serving.
