Quick and easy lemon chicken pasta dinner ready in 30 minutes, switches to penne if no gemelli available.
Ingredients:
  • 12 ounces gemelli pasta
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1.5 pounds boneless, skinless chicken breast, cut into 2-inch strips
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon granulated garlic
  • 0.25 teaspoon salt
  • 0.5 cup quartered portobello mushrooms (optional)
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1 small lemon, zested and juiced
  • 2 tablespoons Chardonnay wine
  • 2 tablespoons flour
  • 13 ounces chicken broth
  • 8 ounces fresh spinach
  • 5 ounces shredded Gruyere cheese
Instructions:
  • Bring a large pot of salted water to a gentle boil. Cook gemelli until al dente, about 12 minutes. Reserve 1 cup of pasta cooking water before draining.
  • In a large skillet over medium heat, heat olive oil and melt 1 tablespoon of butter. Season chicken strips with Italian seasoning, garlic granules, and salt, then add them to the skillet. Cook until golden, about 5 minutes. Add portobello mushrooms and cook until softened, about another 5 minutes.
  • Take the chicken and mushrooms out of the skillet and place them on a plate to keep them warm.
  • In a clean skillet, combine 1 tablespoon of oil and 1 tablespoon of butter. Melt the butter over medium heat, then add garlic and cook for about 30 seconds until fragrant. Stir in thyme sprigs and lemon zest, cooking for another 30 seconds while stirring regularly. Pour in wine and lemon juice, simmer until the sauce reduces by half, approximately 3 minutes. Whisk in flour to thicken and create a roux, then slowly add broth while whisking constantly until a thick sauce forms. Finally, add spinach and cook for 1 minute.
  • Combine half of the Gruyere cheese, stirring until fully incorporated. Then, add the rest of the cheese and stir until melted. If the sauce is too thick, gradually mix in some of the reserved pasta water to reach desired consistency.
  • Combine the cooked pasta with the sauce in the skillet. Mix in the chicken and mushrooms, adjust seasoning as needed, and serve right away.
