Lemon garlic chicken thighs cooked in one skillet for a comforting and flavorful meal.
Ingredients:
  • 4 cloves garlic, crushed
  • 2 teaspoons brown sugar
  • 1 teaspoon ground thyme
  • 1 teaspoon crushed dried rosemary
  • 0.5 teaspoon ground Jamaican allspice
  • salt and freshly ground black pepper to taste
  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 cup chicken stock
  • 2 lemons
Instructions:
  • Combine minced garlic, rich brown sugar, fragrant thyme, aromatic rosemary, flavorful allspice, a pinch of salt, and a dash of pepper in a bowl. Gently press the chicken dry and massage it with the delightful spice blend. Chill in the refrigerator for 30 minutes.
  • First, heat a generous amount of olive oil in a skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook until they are wonderfully crispy, which should take about 4 minutes. Turn the chicken over. Then, gently pour chicken stock around the thighs and squeeze the juice of one lemon into the skillet. Lastly, slice the second lemon and artistically arrange the slices over the thighs. Enjoy!
  • Simmer the chicken until fully cooked and tender, about 30 minutes. Use a thermometer to ensure the internal temperature reaches 165 degrees F (74 degrees C). Remove lemon slices and serve.
