Lemon chicken with potatoes and peas

Ingredients:
  • olive oil cooking spray
  • 4 (180g each) chicken breast fillets, trimmed
  • 375ml chicken style liquid stock
  • 1 lemon, rind finely grated, juiced
  • 4 medium desiree potatoes, thinly sliced
  • 187.50 ml frozen peas
  • 125.00 ml flat-leaf parsley leaves, chopped
Instructions:
  • Preheat a large non-stick saucepan over high heat. Lightly oil chicken and sear for 1 minute on each side until golden. Transfer to a plate.
  • Pour in the stock, 1/4 cup of lemon juice, and the potatoes into a saucepan. Season generously with salt and pepper. Place the chicken on top of the potatoes. Bring the mixture to a boil, then lower the heat. Cover and simmer for 20 to 25 minutes until the chicken is cooked through and the potatoes are tender.
  • Stir in peas and a generous 1/3 cup of fresh parsley. Cook briefly for 2 to 3 minutes, just until the peas are tender.
  • Transfer the chicken to a plate, then quarter each breast. Scoop the potato mixture onto plates and place the chicken on top. Drizzle with the pan juices and garnish with a mixture of parsley and lemon rind. Serve.
