Quick and delicious stuffed pita pockets filled with zesty lemon chicken and olives.
Ingredients:
  • 1 lemon, zested
  • 4 tablespoons fresh lemon juice
  • 2 Tablespoons olive oil
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh oregano leaves
  • 2 cloves garlic
  • 1/2 teaspoon smoked paprika
  • 2 cups shredded precooked chicken
  • 2 tablespoons chopped kalamata olives
  • 1 Roma tomato, sliced
  • 1/2 seedless English cucumber, cut into matchsticks
  • 1/4 small red onion, thinly sliced
  • 2 pita breads, cut in half
Instructions:
  • In a blender, blend lemon zest, lemon juice, olive oil, parsley, oregano, garlic, and paprika for 5 to 10 seconds until well combined.
  • Combine chicken, olives, and lemon sauce in a bowl, then stir until mixed well.
  • Warm the pita bread in the microwave on High for approximately 15 seconds.
  • Fill pita bread with savory chicken mixture. Layer with fresh tomato, cucumber, and red onion. Enjoy warm.
