Quick and easy lemon ginger crinkle cookies for the whole family to enjoy.
Ingredients:
  • 1 cup packed brown sugar
  • 0.5 cup shortening
  • 1 egg
  • 1 tablespoon lemon zest
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon cream of tartar
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 0.5 cup white sugar, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a bowl, cream together brown sugar, shortening, egg, and lemon zest until smooth. Add in flour, baking soda, cream of tartar, ginger, and salt, mixing until dough forms.
  • Spread a layer of white sugar on a plate. Shape the dough into 1-inch balls and coat one side with white sugar. Place the balls onto 2 baking sheets with the sugared side facing up.
  • Bake in the oven until edges are a delicate golden color and tops appear dry, for 10 to 12 minutes.
