Delicious lemon crumb muffins with oat streusel topping, great for breakfast or brunch.
Ingredients:
  • 0.33333334326744 cup white sugar
  • 3 tablespoons all-purpose flour
  • 1 tablespoon oats
  • 2 tablespoons cold salted butter, cut into small pieces
  • 0.25 cup applesauce
  • 1 large egg
  • 1 tablespoon lemon zest
  • 0.5 cup lemon juice
  • 0.25 cup sour cream
  • 1.25 cups all-purpose flour
Instructions:
  • Preheat the oven to 350°F (175°C), then prepare a muffin tin by lining it with parchment paper liners.
  • Combine sugar, flour, and oats in a small bowl until mixed. Incorporate butter into the mixture until it resembles damp sand. Set the topping aside as you make the muffin batter.
  • Combine applesauce, sugar, egg, and lemon zest in a large bowl. Mix in lemon juice and sour cream until blended. Fold in flour, baking powder, and salt until just combined.
  • Fill each prepared muffin cup halfway with the batter. Generously sprinkle the topping on each muffin until fully covered.
  • Bake in the preheated oven for 20 to 25 minutes or until a toothpick inserted comes out clean. Allow to cool in the tin for about 10 minutes before serving.
