Irresistibly tangy lemon squares with a crunchy sugar crust, cut into cute bars or triangles.
Ingredients:
  • 155g (3/4 cup) caster sugar
  • 125g butter, chopped, at room temperature
  • 20.00 ml finely grated lemon rind
  • 2 eggs
  • 125ml (1/2 cup) milk
  • 60ml (1/4 cup) fresh lemon juice
  • 200g (1 1/3 cups) self-raising flour
  • 45.00 gm white sugar
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease a 21cm square cake pan and line it with overhanging baking paper.
  • In a bowl, use electric beaters to cream together the caster sugar and butter until pale and creamy. Mix in the lemon rind until combined. Add the eggs one at a time, beating well after each addition. In a jug, combine the milk and lemon juice (it's okay if it looks a bit curdled). Gently fold half of the flour, then the milk mixture, into the butter mixture. Finally, fold in the remaining flour.
  • Spread the mixture evenly in the pan and level the top. Bake for 15 minutes. Sprinkle with white sugar and bake for an additional 15 minutes until the slice springs back when lightly touched.
  • Allow the dish to rest in the pan for 10 minutes, then transfer it to a wire rack to cool thoroughly. Cut into squares before serving.
