Lemon-Blueberry Crunch Dessert

30-Minute Lemon Blueberry Granola Dessert made with Bisquick® mix for a delightful crunch.
Ingredients:
  • 2 1/3 cups Original Bisquick™ mix
  • 3 tablespoons sugar
  • 2 teaspoons grated lemon peel
  • 6 containers (6 oz each) lemon yogurt
  • 3 cups blueberries
  • 3/4 cup crushed granola cereal
Instructions:
  • Preheat oven to 425°F and generously spray a 13x9-inch pan with cooking spray. Combine Bisquick mix, sugar, milk, butter, lemon peel, and lemon juice in a medium bowl until a soft dough forms. Spread the dough evenly in the pan.
  • Bake for approximately 15 minutes until beautifully golden; then allow to cool.
  • Cut the shortcake into 2-inch squares. In a tall parfait glass or dessert dish, alternate layers of shortcake, half of a container of yogurt, 1/4 cup of blueberries, and 1 tablespoon of granola. Repeat the layers.
