Effortlessly make zesty lemon bars with store-bought lemon curd, enhanced with coconut and almonds for added richness and crunch.
Ingredients:
  • 1 cup butter, softened*
  • 1 cup sugar
  • 2.5 cups Pillsbury BEST® All Purpose Flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 (10 ounce) jars Dickinson's® Lemon Curd
  • 0.75 cup flaked coconut
  • 0.5 cup almonds, chopped
  • 1 tablespoon powdered sugar
Instructions:
  • Preheat oven to 350 degrees F. Cream butter and sugar in a large bowl until smooth. Add flour, baking soda, and salt, mixing until a crumbly mixture forms. Press 3/4 of the mixture into the bottom of an ungreased 13 x 9-inch baking pan.
  • After baking for 10 minutes, allow the dish to cool briefly. Spread the curd over the baked layer, then combine coconut and almonds with the remaining crumb mixture. Sprinkle the mixture over the curd.
  • Continue baking for an extra 25 minutes or until lightly golden. Remove from the oven and allow to cool slightly. Sprinkle with powdered sugar and cut into squares.
