Delicious tangy lemon bars with dual crusts and extra coconut for a superior flavor.
Ingredients:
  • 1 cup unsalted butter
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 0.5 teaspoon baking soda
  • 1 (10 ounce) jar lemon curd
  • 0.66666668653488 cup flaked coconut
  • 0.5 cup toasted and chopped almonds
Instructions:
  • Preheat your oven to 375°F (190°C) for baking perfection.
  • Start by blending the butter in a large mixing bowl. Mix in the flour, sugar, and baking soda until coarse crumbs form.
  • Press 2/3 of the mixture into the bottom of a 9x13 inch baking pan. Bake at 375 degrees F (190 degrees C) for 10 minutes. Cool briefly.
  • Spread the luscious lemon curd over the baked layer, then mix the coconut and almonds into the remaining 1/3 of the crumb mixture and sprinkle it over the lemon curd.
  • Reduce oven temperature to a cozy 350 degrees F (175 degrees C) and let the bars bake for 25 minutes, or until they acquire a lovely light brown color.
