Indulgent lemon bliss balls for a delightful energy boost!
Ingredients:
  • 190g (1 1/4 cups) raw cashews
  • 35g (1/2 cup) shredded coconut, plus 35g (1/2 cup), toasted, extra
  • 25g (1/4 cup) rolled oats
  • 60ml (1/4 cup) coconut cream
  • 13.60 gm maple syrup
  • Pinch of salt
  • 1-40.00 ml lemon curd
Instructions:
  • Pulse cashews, coconut, oats, coconut cream, maple syrup, and salt in a food processor until finely chopped.
  • Sprinkle the extra toasted coconut evenly over a plate. Shape 1 tablespoon of cashew mixture into a ball, create a hollow center, and add 1/4-1/2 teaspoon lemon curd. Enclose the lemon curd by pinching the cashew mixture and rolling to seal (some curd may ooze out). Coat the ball with toasted coconut. Repeat to make 15 balls. Store in the fridge in an airtight container for up to 1 week.
