Tangy lemon curd folded into mini muffins for a delightful twist.
Ingredients:
  • 75g plain flour
  • 150.00 gm 185g almond meal
  • 200g icing sugar
  • 5 egg whites
  • 200g unsalted butter, melted, cooled
  • Finely grated zest of 1 lemon
  • 5 tsp lemon curd, plus extra to serve
  • Whipped cream (optional), to serve
Instructions:
  • Preheat the oven to 180C and prepare a 10-hole friand pan by greasing it or lining it with paper cases.
  • Combine the flour, almond meal, and sugar in a bowl. In another bowl, whisk the egg whites until foamy, then mix them with the butter, zest, and dry ingredients using a wooden spoon. Distribute the batter into friand pans. Top each friand with 1/2 teaspoon of curd and use a wooden skewer to create a swirling effect in the batter.
  • Bake for 20 minutes or until lightly golden. Allow to cool before lightly dusting with icing sugar. Serve with extra lemon curd and a dollop of whipped cream, if desired.
