Delicious lemon ice cream in meringue nests. Easy and quick!
Ingredients:
  • 350g lemon curd
  • 5 meringue nests, crushed
  • 2 litres vanilla ice-cream, softened (see note)
  • meringue nests, to serve
Instructions:
  • Incorporate lemon curd and crushed meringue into the ice-cream. Transfer the mixture into a container or a 22cm round springform pan or a 10cm x 20cm loaf pan, smoothing the surface. Cover with plastic wrap to prevent ice crystals and freeze until solid. Let it sit at room temperature for 5 minutes before serving in meringue nests.
