Impress guests with these delightful mini tartlets at your next event.
Ingredients:
  • 2 tsp finely grated lemon rind
  • 60ml lemon juice
  • 100g caster sugar
  • 2 eggs, lightly whisked
  • 36 bought canape pastry cases
  • Fresh raspberries, to decorate
Instructions:
  • In a medium saucepan over low heat, gently mix together the lemon rind, lemon juice, sugar, butter, and eggs. Stir and cook for 5 minutes until the curd thickens. Take off the heat, strain through a fine sieve into a bowl, cover with plastic wrap, and chill in the fridge for 1 hour.
  • Distribute the lemon curd evenly into the pastry cases, then top each with a raspberry. Display them on a serving platter for a beautiful presentation.
