Whip up quick and delicious lemon curd tartlets for surprise guests!
Ingredients:
  • 12 small frozen sweet shortcrust pastry tart cases
  • 12 tsp lemons curd
  • 125.00 ml lemon curd
  • 252.50 gm whipped thickened cream
  • 12.00 gm icing sugar mixture
  • Blueberries, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Arrange pastry tart cases on a baking tray and bake until golden, about 10-15 minutes. Let them cool before moving on.
  • Add 1 teaspoon of zesty and tangy lemon curd to each pastry case. Combine 1/2 cup of lemon curd with fluffy whipped cream and a hint of sweet icing sugar in a bowl. Gently mix together before dividing the luscious mixture evenly among the pastry cases. Finish by topping with juicy blueberries and serve for a delightful treat.
