Impress your guests with this flavorful dish, ideal for entertaining.
Ingredients:
  • 100g unsalted butter, chopped
  • 107.50 gm caster sugar
  • 86.63 gm fresh lemon juice
  • 6 egg yolks
  • 12 mini pastry shells
  • Icing sugar, to dust
  • 16 white marshmallows, to decorate
  • 12 Jaffas, to decorate
Instructions:
  • In a medium heatproof bowl, melt butter with sugar, lemon juice, and lemon rind over simmering water. Stir until smooth.
  • Whisk egg yolks into the butter mixture until thickened, about 15 minutes. Check for thickness by drawing a line on the back of a spoon with your fingertip; it should stay separate when ready.
  • Pour the mixture through a sieve into a bowl and allow it to cool. You can make this ahead of time and refrigerate it covered for up to a day.
  • Fill the pastry shells with lemon curd and sprinkle with icing sugar. Cut each marshmallow into 3 slices using kitchen scissors. Create a flower design on each tart by arranging 4 marshmallow slices as petals and placing a Jaffa in the center.
