Deliciously sweet and tart homemade lemon custard, perfect for filling cakes and mini pies.
Ingredients:
  • 0.25 cup cornstarch
  • 0.75 cup water
  • 2 large egg yolks
  • 0.33300000429153 cup lemon juice
  • 2 tablespoons unsalted butter
Instructions:
  • In a double boiler set over simmering water, mix sugar, cornstarch, and salt. Stir consistently and use a rubber spatula to scrape down the sides to prevent burning until the sugar melts, about 3 to 5 minutes.
  • In a small bowl, combine water and egg yolks, then pour the mixture into sugar while whisking until fully mixed. Cook and stir constantly until thickened, 3 to 5 minutes.
  • Take the pot off the heat and gently mix in the lemon juice and butter until fully combined. Cover the mixture with plastic wrap and allow it to cool completely.
