Simple lemon cake recipe for all occasions.
Ingredients:
  • 2.5 cups sifted cake flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup butter
  • 1 tablespoon lemon zest
  • 1.75 cups white sugar
  • 6 egg yolks
  • 1.125 cups milk
Instructions:
  • Prepare two 9-inch round pans by lining them with parchment paper. Preheat the oven to 350 degrees F (175 degrees C).
  • Sift together flour, baking powder, and salt three times after measuring.
  • Combine butter or margarine with lemon rind until smooth. Slowly incorporate sugar until mixture is light and fluffy. Add egg yolks one by one, beating well after each. Alternate adding sifted ingredients and milk gradually to the mixture, beating until smooth after each addition.
  • Bake for 25 to 30 minutes until golden brown, then cool on wire racks.
