Lemon grilled chicken with roast tomato salad

Flavorful lemon grilled chicken, a quick weeknight favorite!
Ingredients:
  • 3 (about 900g) chicken breast fillets
  • 42.00 gm lemon juice
  • 80ml olive oil
  • 40.00 ml coarsely chopped fresh oregano
  • 4 garlic cloves
  • 4 vine-ripened tomatoes, cut into wedges
  • 1 small lemon, thinly sliced
  • 1 large fresh red chilli, thinly sliced
  • 15.00 gm caster sugar
  • 1 bunch rocket, ends trimmed
Instructions:
  • Cut each chicken fillet into 3 thin pieces. Place the chicken in a glass or ceramic dish. Season with salt, pepper, lemon juice, half of the oil, and oregano. Finely chop 2 garlic cloves and sprinkle over the chicken. Gently mix everything together. Cover with plastic wrap and refrigerate for 30 minutes.
  • Preheat your oven to 180°C. Line an oven tray with baking paper. Arrange the tomato, lemon, and chili on the tray. Thinly slice the rest of the garlic and scatter over the tomato. Drizzle with the remaining oil, season with salt and pepper, then roast for 30 minutes until the tomatoes soften and the lemon chars slightly. Transfer to a bowl and sprinkle with sugar.
  • Preheat a char-grill to medium-high heat. Remove chicken from extra marinade and grill half of it for 2 minutes per side, or until beautifully golden and fully cooked. Place on a plate and cover with foil to stay warm. Repeat with the rest of the chicken.
  • Assemble chicken, tomato, lemon, and rocket beautifully on plates.
