Homemade lemon loaf with tangy glaze - a sweet and zesty delight!
Ingredients:
  • 0.5 cup butter
  • 0.5 cup white sugar
  • 2 eggs
  • 0.5 cup sour cream
  • 1 teaspoon freshly grated lemon peel
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda
  • 2 cups confectioners' sugar
  • 3 tablespoons lemon juice
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and grease an 8x4-inch loaf pan.
  • In a large bowl, cream together butter and sugar using an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in sour cream, vanilla, and lemon zest, and beat for 2 minutes. In a separate bowl, whisk together flour, cornstarch, salt, and baking soda. Gently fold the flour mixture into the butter mixture until just combined. Transfer the batter to the prepared pan.
  • Bake in the preheated oven for 30-35 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool.
  • Prepare the glaze by combining confectioners' sugar and zesty lemon juice in a medium bowl, whisking until silky smooth. Once the cake has cooled, position it on a serving plate and generously drizzle the glaze over the entire cake. Let the glaze set before enjoying this delightful treat.
