Lusciously moist cake drizzled with fresh lemon juice.
Ingredients:
  • 125g butter, softened
  • 322.50 gm caster sugar
  • 1 large lemon, rind finely grated, juiced
  • 2 eggs
  • 225.00 gm self-raising flour, sifted
  • 128.75 gm milk
Instructions:
  • Preheat your oven to 180°C, then prepare a 6cm deep, 19cm x 10cm loaf pan by greasing and lining it.
  • With an electric mixer, whip together butter, 1 cup of sugar, and zest until fluffy. Slowly add eggs one at a time, mixing well after each addition.
  • Combine half of the flour and milk with the egg mixture, gently stirring. Then, fold in the remaining flour and milk. Transfer the mixture into a loaf pan and bake for 45 to 50 minutes until a skewer inserted into the center comes out clean.
  • Combine the remaining sugar with 1/3 cup of lemon juice, then pour over the hot loaf while still in the pan. Let it cool in the pan until completely cooled.
