Ingredients:
  • 4 large pork cutlets
  • 36.40 gm olive oil
  • 1 lemon, rind finely grated
  • 20.00 ml balsamic vinegar
  • 3 Granny Smith apples, peeled, cored
  • 250.00 gm water
  • 56.10 gm sultanas
  • 40.00 ml rosemary leaves, finely chopped
  • 250g baby carrots, steamed
  • Mixed salad leaves, to serve
Instructions:
  • Arrange the pork in a single layer in a ceramic ovenproof dish. In a jug, mix together oil, lemon rind, lemon juice, vinegar, salt, and pepper. Drizzle the mixture over the pork, ensuring it is evenly coated. Cover and refrigerate for 30 minutes.
  • Preheat your oven to a perfect 200°C. Uncover the cutlets and bake them for 25 minutes, or until they are perfectly cooked through.
  • Roughly chop the apples and then simmer them with water in a saucepan over medium heat until the water boils. Lower the heat and continue simmering until the apples are soft. Finally, mix in the sultanas and rosemary, season with salt and pepper, and remove from heat after 4 minutes.
  • Plate the cutlets alongside apple sauce, baby carrots, and a fresh salad.
