Citrus-infused lemon meltaways are a modern classic with buttery dough, double lemon kick, and easy short ingredient list. Tossed in powdered sugar for extra melt-in-your-mouth tenderness. Try them out and make them a staple in your recipe collection!
Ingredients:
  • 1 cup butter, softened
  • 2 cups powdered sugar
  • 3 tablespoons finely grated lemon zest
  • 2 cups Gold Medal™ all-purpose flour
  • 1 cup powdered sugar
  • 1 to 2 tablespoons lemon juice
Instructions:
  • Preheat oven to 400°F.
  • In a large bowl, use an electric mixer to beat softened butter, 1/2 cup powdered sugar, and lemon zest until fluffy. Stir in flour until a soft dough forms. Shape dough into 36 (1 1/4-inch) balls, place them 1 1/2 inches apart on ungreased cookie sheets, and flatten each ball into a 1 1/2-inch circle (cookies will not spread during baking).
  • Bake for 6 to 8 minutes until edges are set but not brown. Allow to cool for 2 minutes on the cookie sheet, then transfer to a cooling rack. In a small bowl, add 1 1/2 cups of powdered sugar. Roll each warm cookie in the powdered sugar, then place on the cooling rack. Let cool completely for about 30 minutes. Lastly, roll the cookies again in powdered sugar for a final coating.
  • Combine 1 cup of powdered sugar and 1 tablespoon of lemon juice in a small bowl, mixing until smooth. If the mixture is too thick, slowly add more lemon juice, 1 teaspoon at a time. Transfer the icing to a resealable plastic bag, seal partially, and cut a small hole in one corner. Pipe the icing over the cookies and allow it to set for about 1 hour. Store the cookies in an airtight container once the icing has set.
