Ingredients:
  • 225g butter, at room temperature, chopped
  • 3 tsp finely grated lemon rind
  • 150g (1 cup) self-raising flour
  • 75g (1/2 cup) plain flour
  • 125ml (1/2 cup) lemon juice
  • 150g (1 cup) icing sugar mixture, sifted
  • 25g butter, melted
  • 1-10.50 gm strained lemon juice
Instructions:
  • Preheat your oven to 170C/150C fan forced. Grease a 16 x 26cm slice pan and line with baking paper, leaving paper overhanging on the two long sides.
  • With electric beaters, whip together the butter, sugar, and lemon zest until light and fluffy. Gradually add in the eggs one at a time, mixing well after each addition. Gently fold in the sifted flours and lemon juice until fully combined.
  • Pour mixture into the pan and level the top. Bake for 30 minutes, or until lightly golden and firm to the touch in the center. Let it sit in the pan for 10 minutes before moving it to a wire rack to cool completely.
  • Prepare the glaze by whisking together icing sugar, butter, and 1 tablespoon of lemon juice until silky, adjusting with more juice as needed. Smooth it over the cake and allow it to firm up for an hour. Slice into squares before serving.
