Whip up these zesty lemon cookies with a sweet frosting - a simple and speedy treat!
Ingredients:
  • 0.75 cup butter, softened
  • 0.33333298563957 cup confectioners' sugar
  • 1.25 cups all-purpose flour
  • 0.5 cup cornstarch
  • 0.75 cup confectioners' sugar
  • 0.25 cup butter, softened
  • 1 teaspoon lemon juice
Instructions:
  • Cream 3/4 cup butter and 1/3 cup confectioners' sugar in a medium bowl until smooth. Add 1 tablespoon lemon juice and 1 teaspoon lemon zest, and mix well. Combine flour and corn starch, then blend into the lemon mixture to form a soft dough. Divide dough in half, roll each half into an 8-inch long log, about 1 inch in diameter. Wrap in plastic wrap and refrigerate for 2 hours, or until firm.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C). Slice each roll into 1/4 inch pieces and arrange them on the cookie sheet.
  • Place in a heated oven for 8 to 12 minutes until firm. Let it cool completely before adding frosting.
  • Combine 3/4 cup confectioners' sugar, 1/4 cup butter, 1 teaspoon lemon juice, and 1 teaspoon lemon zest in a small bowl. Use an electric mixer to blend until smooth. Frost cookies, then let them dry before serving or storing.
