Transform leftover salmon into a mouthwatering lemon pasta dish in just 35 minutes that's sure to please the whole family.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 3 tablespoons salted butter, divided
  • 3 tablespoons olive oil, divided
  • 1 large yellow onion, chopped
  • 3 cloves garlic, chopped, or more to taste
  • 1 pound cooked salmon, flaked
  • 1 large lemon, zested and juiced
  • 0.5 cup chopped fresh Italian parsley
  • salt and ground black pepper to taste
Instructions:
  • 1. Boil a large pot of lightly salted water. Add penne and cook, stirring occasionally, until al dente, about 11 minutes.
  • In a large skillet over medium heat, combine 2 tablespoons of butter and 2 tablespoons of oil. Saute onions in the mixture until translucent for about 5 minutes. Stir in garlic and cook until fragrant for about 2 minutes. Finally, add the salmon and cook until heated through for about 3 minutes.
  • After draining the pasta, transfer it to the skillet. Sprinkle in the fresh parsley and lemon zest. Squeeze in the lemon juice and season with salt and pepper. Pour in the remaining oil and butter, then stir until the pasta is glossy.
