Easy and delicious lemon poke cake made with cake mix and instant pudding, soaked in tangy lemon glaze.
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 0.75 cup water
  • 0.5 cup vegetable oil
  • 4 eggs
  • 0.33333298563957 cup lemon juice
  • 2 cups confectioners' sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while you prepare a 9x13-inch pan by greasing and flouring it.
  • Combine cake mix and instant pudding in a large bowl. Incorporate water, oil, and eggs until the batter is silky smooth. Spread the mixture evenly into the pan.
  • Bake in the preheated oven for 40-45 minutes or until a toothpick comes out clean. While cake is hot, poke holes in the top using a fork.
  • Prepare the glaze by whisking together lemon juice and confectioners sugar until smooth. Drizzle the glaze over the warm cake, allowing it to soak into the holes. Allow the cake to cool before serving.
