Easy lemon poppy seed Bundt cake made with lemon cake mix, pudding mix, and poppy seeds for a moist, crowd-pleasing treat.
Ingredients:
  • 0.25 cup milk
  • 0.25 cup poppy seeds
  • 1 (18.25 ounce) package lemon cake mix
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1 cup water
  • 0.5 cup vegetable oil
  • 4 eggs
Instructions:
  • Allow poppy seeds to bathe in milk for 2 hours until plump. Preheat oven to 350 degrees F (175 degrees C) and generously coat a 10-inch Bundt pan with butter and flour.
  • In a large bowl, combine cake mix and pudding mix. Create a well in the center and add water, oil, and eggs. Mix with an electric mixer on low speed until combined. Scrape the sides of the bowl, then beat on medium speed for 4 minutes. Stir in poppy seed mixture and pour batter into the prepared pan.
  • Bake in the preheated oven for about 1 hour or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
