Lemon queen of puddings

Ingredients:
  • 300ml thin cream
  • 1 tsp grated lemon rind
  • 125g caster sugar
  • 60g fresh white breadcrumbs
  • 10g unsalted butter
  • 2 eggs, separated, plus 2 extra eggwhites
  • 300g good-quality lemon curd*
  • 12.00 gm icing sugar
Instructions:
  • Preheat the oven to 170°C. In a pan, combine cream, rind, and 25g sugar over low heat until sugar dissolves. Remove from heat, stir in breadcrumbs and butter. Add yolks and beat until combined.
  • Pour the mixture evenly into four 250ml-capacity ovenproof dishes, arrange them on a baking sheet, and bake for 20 minutes or until gently set. Take them out of the oven and preheat the oven to 190°C. Spread curd on top of the puddings. Use an electric mixer to beat egg whites in a clean bowl until soft peaks form. Gradually add the remaining sugar and beat until stiff and glossy. Pipe the meringue onto the puddings, sprinkle them with icing sugar, and bake for 5-10 minutes or until golden.
