Zesty lemon cookies with irresistible tangy filling.
Ingredients:
  • 1 egg, beaten
  • 1 cup butter or margarine, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 2/3 cups Gold Medal™ all-purpose flour
  • 1 tablespoon powdered sugar
  • 2/3 cup granulated sugar
  • 2 to 3 teaspoons grated lemon peel
  • 3 tablespoons lemon juice
  • 1 teaspoon cornstarch
Instructions:
  • Combine butter, 1/3 cup powdered sugar, and vanilla in a large bowl. Use an electric mixer on medium speed until well blended. Stir in flour until dough forms. Refrigerate for 30 minutes for easier handling.
  • Preheat oven to 350°F. Roll dough into 1-inch balls and place them on ungreased cookie sheets, spacing them 2 inches apart. Press your thumb into the center of each ball to create an indentation.
  • Bake for 8 to 10 minutes, or until beautifully golden brown. Transfer the cookies from the sheets to cooling racks right away. Allow them to cool completely for about 30 minutes.
  • In a small saucepan, gently cook all filling ingredients over low heat for 25 minutes, stirring continuously until the mixture is smooth and thick. Allow the mixture to cool slightly for about 15 minutes before using.
  • Place a rounded 1/4 measuring teaspoon of filling into each thumbprint. Dust cookies with 1 tablespoon of powdered sugar.
