A quick and delightful twist on tiramisu with mascarpone, lemon curd, whipped cream, and a hint of limoncello. Ready in just 15 minutes!
Ingredients:
  • 450ml thickened cream
  • 250g (1 cup) mascarpone
  • 60ml (1/4 cup) limoncello
  • 185ml (3/4 cup) lemon juice cordial
  • 24 savoiardi (sponge finger biscuits)
  • 165.00 ml lemon curd
  • 1 lemon
Instructions:
  • Whip the cream, mascarpone, sugar, and limoncello, if using, with electric beaters until firm peaks form.
  • Combine the cordial and 180ml (¾ cup) water in a wide, shallow bowl or tray.
  • Dip a biscuit into the flavorful cordial mixture, letting any extra liquid drip off. Place it in the bottom of a dish measuring 18 x 28cm (8 cups). Repeat with half of the remaining biscuits, arranging them to form a tidy layer over the dish's base, breaking them if necessary to fit.
  • Evenly layer half of the luscious mascarpone mixture over the delicious biscuits in the dish. Gently dot half of the tangy lemon curd on top, then swirl through with a flat-bladed knife for a beautiful marble effect.
  • Create another layer of dipped biscuits. Top with the remaining mascarpone mixture and swirl in the remaining curd. Refrigerate overnight. Garnish with lemon slices before serving.
