Sweet and tart Lemon Whoopie Pies made with zesty lemon sugar cookies and frosting.
Ingredients:
  • Yellow food color, if desired
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1/3 cup sour cream
  • 1/4 cup butter, softened
  • 1 teaspoon lemon extract
  • 1 egg
  • Grated peel of 1 lemon
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Lemon Frosting or 1 tub (16 oz) Betty Crocker™ Rich & Creamy Creamy White Frosting
Instructions:
  • Preheat the oven to 350°F. Combine the cookie mix and flour in a large bowl. Mix in the remaining cookie ingredients until a stiff dough forms.
  • Roll the dough into 28 (1 1/4-inch) balls and space them 2 inches apart on an ungreased cookie sheet. Gently press down on each ball to slightly flatten.
  • Bake the cookies for 8 to 9 minutes until they are set. Then, transfer them from the cookie sheet to a cooling rack to cool completely.
  • In a small bowl, combine filling ingredients. Spread or pipe filling onto the bottom of one cookie for each whoopie pie. Top with a second cookie, bottom side down, and gently press together.
