Delicious zucchini snack cake perfect for using up your bumper crop!
Ingredients:
  • 1.25 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 teaspoons lemon zest
  • 0.25 cup fresh lemon juice
  • 1.75 cups grated zucchini
  • 2 cups all-purpose flour
  • 0.25 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts
  • 0.33333334326744 cup confectioners' sugar for decoration
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • Mix together sugar, oil, eggs, lemon zest, and lemon juice in a large bowl until well combined. Add shredded zucchini and stir.
  • In a separate bowl, blend together flour, baking powder, baking soda, and salt. Slowly incorporate this into the zucchini mix. Stir until fully combined, then fold in the walnuts.
  • Pour the batter into the prepared pan and bake for 35 to 45 minutes, or until a tester inserted in the center comes out clean. Allow the cake to cool, then sprinkle with sifted confectioners' sugar and cut into bars.
  • Dust the surface with powdered sugar and slice into rectangular bars.
