Lemon-infused zucchini bread is a delightful twist on a classic recipe, enhanced with a burst of fresh, zesty flavor from just a hint of lemon zest.
Ingredients:
  • 1.5 cups shredded zucchini
  • 0.75 cup white sugar
  • 0.5 cup vegetable oil
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 2 teaspoons lemon zest
  • 1 teaspoon ground cinnamon
Instructions:
  • Prepare all ingredients.
  • Preheat the oven to a cozy 325 degrees F (165 degrees C) and generously grease an 8x4-inch loaf pan.
  • Combine zucchini, sugar, oil, and egg in a mixing bowl and beat together until well mixed.
  • Combine sifted flour, salt, baking soda, and baking powder in a separate bowl. Add cinnamon and lemon zest, then gently fold flour mixture into zucchini mixture until just blended.
  • Gently transfer the batter into the pan that has been prepared.
  • Bake in the preheated oven for about 45 minutes or until a knife inserted in the center comes out clean. Let it cool for 10 minutes, then transfer to a wire rack to cool completely.
