Deliciously fruity pancakes bursting with lemon, blueberries, and raspberries ready in just 20 minutes.
Ingredients:
  • 1 cup Original Bisquick™ mix
  • 1 cup milk
  • Grated peel and juice of 1 lemon
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon vanilla
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh raspberries
  • Butter and real maple syrup
  • Additional fresh berries, if desired
Instructions:
  • Combine Bisquick mix, egg, milk, lemon peel, lemon juice, cardamom, and vanilla in a large bowl. Stir with a whisk until just blended. Gently fold in 1/4 cup each of blueberries and raspberries or drop berries onto each pancake as you pour batter onto the griddle.
  • Preheat griddle or skillet to 375°F. Lightly grease with vegetable oil or cooking spray. Ladle 1/4 cup of batter onto hot griddle for each pancake. Cook for about 3 minutes until bubbles appear. Flip and cook until golden brown on the other side.
  • Plate pancakes, top with a pat of butter and drizzle syrup; finish with extra berries for a beautiful presentation.
