Delicious lemon-berry shortcakes made with Bisquick Heart Smart® mix, topped with whipped cream.
Ingredients:
  • 1/4 cup sugar
  • 2 tablespoons grated lemon peel
  • 1/4 cup blueberry preserves or jam
  • 1 tablespoon water
  • 2 tablespoons fresh lemon juice
  • 1 1/2 cups fresh strawberries, quartered
  • 1 1/2 cups fresh blueberries
  • 1 3/4 cups Bisquick Heart Smart® mix
  • 1/3 cup plus 1 tablespoon 1% (low-fat) milk
  • 5 tablespoons frozen (thawed) fat-free whipped topping
Instructions:
  • Preheat oven to 425°F and spray a cookie sheet with cooking spray. Combine sugar and lemon peel in a small bowl.
  • Heat the preserves and water in a 12-inch skillet over medium heat until the preserves are melted. Stir in 1 tablespoon of the sugar mixture, lemon juice, strawberries, and blueberries. Cook for 1 minute, stirring constantly until the sugar is dissolved. Remove from heat and set aside.
  • Combine Bisquick mix with milk and the remaining sugar mixture in a medium bowl until just moistened. Then, gently press the dough onto a lightly floured surface to 1/2-inch thickness and cut out rounds using a 2 1/2-inch round cutter. Transfer the rounds onto a cookie sheet.
  • Bake for 10 to 12 minutes, or until golden. Once baked, split the shortcakes in half and evenly spoon the berry mixture onto the shortcake bottoms. Add a dollop of 1 tablespoon of whipped topping on each, then cover with the shortcake tops.
