Zesty lemon, crunchy pea pods, and toasted almonds elevate this salad in 30 minutes.
Ingredients:
  • 1 box Betty Crocker™ Suddenly Salad® ranch & bacon pasta salad mix
  • 1 cup mayonnaise
  • 2 teaspoons grated lemon peel
  • 2 tablespoons fresh lemon juice
  • 1 1/2 cups snow pea pods, strings removed, cut diagonally into 1/2-inch pieces
  • 1/2 cup sliced almonds
  • Leaf lettuce, if desired
Instructions:
  • Pour the Pasta mix into a 3-quart saucepan filled 2/3 with boiling water. Cook uncovered over gentle boil for 12 minutes, stirring occasionally.
  • Strain the pasta and briefly rinse with cold water. Shake to remove excess water.
  • Combine the seasoning mix, mayonnaise, lemon peel, and lemon juice in a large bowl. Add chicken, pea pods, and almonds, then mix well. Serve on lettuce leaves and enjoy immediately or refrigerate for later.
