Lemon Roasted Broccoli and Asparagus: Bright, versatile side dish pairs perfectly with any main course. Perfect over rice or enjoyed on its own.
Ingredients:
  • 0.5 pound broccoli florets
  • 3 teaspoons olive oil, divided
  • 1 teaspoon lemon pepper, divided
  • 1 large lemon, sliced
  • 0.5 pound fresh asparagus, trimmed
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • In a bowl, combine broccoli florets with 1 1/2 teaspoons of olive oil and 1/2 teaspoon of lemon pepper seasoning. Toss to coat evenly and spread out on a baking sheet. Top with half of the lemon slices.
  • Place in the hot oven and bake for 15 minutes.
  • In a separate bowl, combine the asparagus with the remaining 1 1/2 teaspoons of olive oil and 1/2 teaspoon of lemon pepper. Toss until evenly coated.
  • Arrange the asparagus in a single layer on the baking sheet and top with the remaining lemon slices. Bake for 10 minutes, then remove from the oven and gently mix the broccoli and asparagus together. Serve promptly.
