Lemon-salted chips with roasted garlic cream

Ingredients:
  • 2 garlic bulbs
  • 6 (about 1.2kg) pontiac potatoes, cut into thick wedges
  • 18.20 gm olive oil
  • 9.60 gm sea salt flakes
  • 2 tsp finely grated lemon rind
  • 250g creme fraiche
  • 21.00 gm lemon juice
  • 11.80 gm Dijon mustard
Instructions:
  • 1. Preheat the oven to 100°C. 2. Arrange garlic bulbs on an oven tray and bake for 1 hour and 15 minutes, or until garlic is soft and caramelized. 3. Remove from oven and let cool.
  • Preheat the oven to 200°C. Place potatoes in a roasting pan, drizzle with oil, sprinkle with 1/2 teaspoon salt, and season with black pepper. Toss gently to combine. Bake for 30 minutes until golden brown and crisp, turning occasionally. Sprinkle remaining salt and lemon rind over the chips while hot.
  • Cut the tops off the garlic bulbs, squeeze the pulp into a bowl, and mash with a fork until smooth. Mix in the creme fraiche, lemon juice, and mustard, then season with salt and pepper. Serve the chips with the garlic cream.
