Paprika-salted kumara chips

Ingredients:
  • 4.80 gm sea salt flakes
  • 1/2 tsp freshly ground black pepper
  • 1.25 gm ground paprika
  • 1/2 tsp finely grated lemon rind
  • 2 orange sweet potatoes (kumara), peeled
  • Vegetable oil, to deep-fry
Instructions:
  • In a frying pan over low heat, combine salt, pepper, paprika, and rind. Stir and cook for 1 minute until fragrant. Remove from heat and set aside.
  • Peel the kumara into long, thin ribbons using a vegetable peeler and arrange them on a paper towel-lined tray.
  • Pour a generous amount of oil into a large saucepan, allowing it to reach a depth of 10cm. Heat the oil over medium-high heat until it reaches 180°C (to test, fry a cube of bread - it should turn golden brown in 15 seconds).
  • Fry 8 kumara chips for 30 seconds until golden, then drain on paper towel-lined tray. Sprinkle with salt mixture. Repeat with remaining kumara chips and salt. Serve hot.
