Lemon-Topped Gingerbread

Delicious gingerbread paired with tangy lemon sauce is a winning combination.
Ingredients:
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/2 cup Gold Medal™ whole wheat flour
  • 1/4 cup molasses
  • 1/4 cup hot water
  • 2 tablespoons packed brown sugar
  • 2 tablespoons shortening
  • 2 tablespoons fat-free cholesterol-free egg product or 1 egg white
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/8 tablespoon salt
  • Easy Lemon Sauce
Instructions:
  • Preheat your oven to 325°F and generously spray an 8 1/2x4 1/2x2 1/2 inch loaf pan with cooking spray.
  • In a medium bowl, use an electric mixer on low speed to beat all ingredients except Easy Lemon Sauce for 30 seconds, scraping the bowl constantly. Increase the speed to medium and beat for 3 minutes, scraping the bowl occasionally. Pour the mixture into a pan.
  • Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then remove from the pan. Serve warm or chilled with Easy Lemon Sauce.
