Lemonade Cupcakes

Zesty citrus cupcakes made with Betty Crocker™ Super Moist™ cake mix for a delightful dessert.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • 3/4 cup water
  • 1/2 cup vegetable oil
  • 1/4 cup fresh lemon juice
  • 3 eggs
  • 1/4 cup presweetened lemonade flavor drink mix
  • 3 tablespoons water
  • 1/2 cup butter, softened
  • 2 tablespoons whipping cream
  • 1 box (16 oz) powdered sugar
  • 2 drops yellow food color
  • Lemon slice gummy candies
  • 24 small drinking straws
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • In a large bowl, use an electric mixer to beat all cupcake ingredients on low speed for 30 seconds, then increase to medium speed and beat for 2 minutes, scraping the bowl occasionally. Divide the batter evenly among the muffin cups.
  • Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes before transferring to cooling racks. Cool completely.
  • Combine lemonade mix with water in a small bowl until fully dissolved. In a large bowl, use an electric mixer to beat butter, whipping cream, and lemonade mixture until creamy. Gradually blend in powdered sugar and food color on low speed. Frost cupcakes and decorate with gummy candies and straws.
