Lemongrass chicken skewers

Ingredients:
  • 2 stalks lemongrass, white part only, finely chopped
  • 2 purple Asian shallots, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 2 garlic cloves, crushed
  • 16.00 gm brown sugar
  • 21.00 gm dark soy sauce
  • 24.40 gm oyster sauce
  • 12.20 gm fish sauce
  • 1 tsp sesame oil
  • 500g chicken thigh fillets, thinly sliced
  • Green onions, thinly sliced, to serve
  • Steamed jasmine rice, to serve
Instructions:
  • In a mortar, pound lemongrass, shallot, chili, and garlic until a paste forms. Add sugar, sauces, and oil, then stir well. Transfer mixture to a glass or ceramic bowl, add chicken, and stir to coat. Cover with plastic wrap and refrigerate for 1 hour to enhance flavors.
  • Skewer the chicken evenly. Heat a char-grill pan on high. Grill the chicken for 2-3 minutes on each side until cooked through. Place on a platter, garnish with green onions, and serve with steamed jasmine rice right away.
