Zesty chicken stir-fry with tangy fish sauce marinade, sweet honey, aromatic lemongrass, ginger, garlic, and colorful bell pepper.
Ingredients:
  • 1.5 pounds chicken thighs, cut into thin strips
  • 3 tablespoons fish sauce, or more to taste
  • 1.5 tablespoons honey
  • 2 tablespoons vegetable oil
  • 1.5 red bell peppers, cut into strips
  • 0.25 cup chopped lemongrass
  • 0.25 cup grated fresh ginger root
  • 4 cloves garlic, chopped
  • 0.33333334326744 cup chopped green onions
  • 0.25 cup chicken broth
  • 1 tablespoon white sugar
  • 0.5 teaspoon red pepper flakes, or more to taste
  • salt and ground black pepper to taste
Instructions:
  • Combine the chicken, fish sauce, and honey in a bowl, then refrigerate, covered, for at least 30 minutes.
  • Preheat a wok or large skillet over medium-high heat and add oil. Stir in red bell peppers, lemongrass, ginger, and garlic, cooking until the bell pepper strips are tender, about 5 minutes. Then, add the chicken mixture and sauté until the chicken is cooked through, about another 5 minutes.
  • Combine green onions, chicken broth, sugar, red pepper flakes, salt, and pepper in the wok and simmer uncovered until the sauce thickens, approximately 5 minutes.
