Lemongrass chicken rolls

Make mouthwatering Vietnamese-inspired baguette sandwiches for a delicious street-food feast.
Ingredients:
  • 42.00 gm lime juice
  • 20.00 ml lemongrass paste
  • 9.15 gm fish sauce
  • 650g chicken thigh fillets, trimmed
  • 40.00 ml white wine vinegar
  • 7.50 gm caster sugar
  • 2 French shallots, peeled, halved, thinly sliced
  • 2 small carrots, peeled, grated
  • 1 Lebanese cucumber, seeded, cut into matchsticks
  • 4 x 15cm-pieces French breadstick (baguette), split
  • 65g (1/4 cup) whole-egg mayonnaise
  • 1/4 tsp finely grated lime rind
  • 5.30 gm lime juice
Instructions:
  • In a dish, blend lime juice, lemongrass, fish sauce, and garlic. Season with pepper, then add the chicken and coat it well. Cover and refrigerate for 10 minutes to marinate.
  • In a bowl, combine vinegar, sugar, and shallot. Season with salt and pepper. Let it sit for 5 minutes to enhance the flavors. Gently fold in the carrot and cucumber.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill the chicken for 10-12 minutes, turning occasionally, until fully cooked. Transfer the chicken to a plate, cover, and let it rest for 5 minutes. Slice the chicken into 1cm-thick pieces.
  • Grill bread, turning occasionally, until warmed through, about 2 minutes.
  • In a bowl, mix together mayonnaise, lime zest, and lime juice. Season with your favorite spices. Spread this flavorful mixture over the bread. Fill with delicious chicken and crisp salad.
