Transform simple pantry staples - tuna, pasta, lemons - into a quick, flavorful weeknight delight.
Ingredients:
  • 375g spaghetti
  • 82.50 ml pine nuts
  • 425g can tuna in springwater, drained, flaked
  • 36.40 gm olive oil
  • 3 tsp finely grated lemon rind
  • 65.63 gm lemon juice
  • 82.50 ml roughly chopped fresh flat-leaf parsley leaves
  • lemon zest, to serve
Instructions:
  • Prepare pasta in a generous pot of boiling salted water according to package instructions until al dente. Drain cooked pasta.
  • Toast pine nuts in a skillet over medium heat until lightly golden, about 1 to 2 minutes.
  • Combine tuna, oil, lemon rind, lemon juice, parsley, pine nuts, and pasta in a bowl. Season generously with salt and pepper. Mix well to coat evenly. Garnish with lemon zest before serving.
