Delicious Asian lentil burgers - healthy and perfect for any night!
Ingredients:
  • 1 x 400g can brown lentils, rinsed, drained well
  • 1 egg white
  • 28.00 gm Thai red curry paste
  • 35g (1/2 cup, firmly packed) fresh wholegrain breadcrumbs (made from day-old bread)
  • 2 green shallots, ends trimmed, finely chopped
  • 4.60 gm vegetable oil
  • 4 multigrain bread rolls or five-seed bread rolls, split
  • 20.00 gm light cream cheese spread or good-quality reduced-fat mayonnaise
  • 1/2 Lebanese cucumber, thinly sliced
  • 100g fire-roasted red pepper strips (Always Fresh brand), drained on paper towel
Instructions:
  • Combine lentils, egg white, and curry paste in a food processor. Blend until smooth, scraping down the sides as needed. Add breadcrumbs and shallots, process until mixed. Shape the lentil mixture into 4 patties, each 8cm wide.
  • In a large non-stick frying pan, heat oil over medium heat. Cook patties for 2-3 minutes on each side until they turn golden brown. Transfer to a paper towel-lined plate to cool.
  • Spread rolls with luscious cream cheese or mayo, add a savory patty, crisp cucumber slices, and vibrant red pepper strips. Create a delectable sandwich and securely wrap in plastic wrap. Enjoy your flavorful creation!
