Lentil and Green Collard Soup

Delicious lentil and collard soup infused with aromatic spices and zesty lemon, perfect for any season.
Ingredients:
  • 3 tablespoons olive oil, divided
  • 1 large onion, chopped
  • 1 cup dry red lentils, rinsed and drained
  • 6 cups water
  • 1 bunch collard greens - rinsed, stemmed and thinly sliced
  • 2 tablespoons minced garlic
  • 1 tablespoon ground cumin
  • 1 teaspoon ground cinnamon
  • 0.33333334326744 cup lemon juice
Instructions:
  • In a large saucepan over medium heat, warm 1 tablespoon of olive oil. Add onion and salt, cook until softened and translucent, approximately 4 minutes. Toss in lentils and cook for 1 minute. Increase the heat to high, pour in water, and bring to a boil. Lower the heat to medium-low, cover, and simmer until lentils are tender, about 15 minutes.
  • Once the lentils are simmering, warm the remaining 2 tablespoons of oil in a large skillet over medium heat. Sauté the collard greens until they become tender and wilted, which should take about 10 minutes.
  • Once the lentils are tender, gently fold in the vibrant collard greens, aromatic garlic, earthy cumin, and warm cinnamon. Allow the flavors to meld together as you simmer for 10 minutes.
  • Add a squeeze of zesty lemon juice just before enjoying.
