Zesty lime lentils with crisp celery and beans - a vibrant, versatile dish perfect for a satisfying meal or a healthy side at a summer BBQ.
Ingredients:
  • 250g dried brown lentils, rinsed
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsp finely grated fresh ginger
  • 2 tsp garam masala
  • 21.00 gm fresh lime juice
  • 200g green beans, topped
  • 1 x 250g punnet cherry tomatoes, quartered
  • 4 celery sticks, ends trimmed, cut into 4cm matchsticks
  • 125.00 ml fresh coriander leaves
  • 90g (1/3 cup) low-fat natural yoghurt, to serve
Instructions:
  • In a large saucepan, combine the lentils and 1.5L (6 cups) cold water. Bring to a boil, then lower the heat and simmer gently for 25 minutes until the lentils are tender. Drain the lentils before using in the recipe.
  • Heat oil in a non-stick frying pan over medium heat. Sauté the onion until soft, then add garlic, ginger, and garam masala. Cook until aromatic, about 1-2 minutes.
  • Pour the flavorful onion mixture into a spacious heatproof bowl. Combine with lentils and lime juice, stirring until fully mixed. Season with pepper, then let it cool completely.
  • Boil the beans in a saucepan for 3-4 minutes until vibrant green and slightly crisp. Then, cool them under cold running water, drain, and mix with tomato, celery, and coriander. Gently combine with the lentil mixture, plate the salad, and serve with yogurt.
